Fluden, a long-lost, classic European-Jewish dessert is traditionally made for this holiday. The ingredients of fluden vary from country to country, but Chef Harry prefers the Hungarian version with spiced apples layered between a flaky pastry. While we’ll mostly stick to tradition, Chef Harry’s recipe has some modern influences and techniques and, with your help, we just might bring the fluden back to its former glory!

Want to bake alongside Harry? Here’s what you’ll need:

  • 9 inch square pan  (or 8-9 inch round pan)
  • 3 large bowls
  • Saucepan
  • Rolling pin
  • Brush (for egg wash)
  • Measuring cups/spoons
  • Rubber spatula
  • Whisk
  • Sharp knife
  • Baking sheet
  • Offset spatula
  • Parchment paper
  • Stovetop access
  • 6 cups all purpose white flour
  • 5 cups powdered sugar
  • 5-6 eggs
  • 1 cup cold margarine
  • Apricot jam/preserves or prune butter
  • 1/2 cup white wine (dry or semi-dry)
  • Active dry yeast
  • 2 cups poppy seeds
  • 2 cups ground walnuts
  • 1 pound Granny Smith apples
  • 1 orange
  • 1 lemon
  • Sugar
  • Cinnamon
  • Salt
  • Vanilla extract
