- Neutral oil (canola or grapeseed)
- 8 tomatoes
- 1 red pepper (optional)
- 1 medium onion
- 4 cloves garlic
- 1 chili pepper (optional)
- 1/2 Tbsp tomato paste
- 1 Tbsp paprika
- 1/2 tsp ground caraway (optional)
- 1/2 tsp cumin
- Fresh parsley or cilantro (optional, but recommended!)
- Salt
- Pepper
- 6-8 eggs (room temperature)
- Large skillet or saute pan
- Stovetop
- Large pot of simmering water
- Cutting board
- Knife
- Spatula or wooden spoon
